Now this soup is a bit of a revelation.

It’s so quick and easy to make, yet is a taste sensation AND it’s really good for you.

All good stuff with no naughties at all.

And it’s so very vibrant green. Who could resist?

Easy Green Pea Soup

Ingredients

1 small onion

1 tbs olive oil

2 cups vegetable or chicken stock

4 cups frozen peas (approx 650g)

salt and pepper

Method

1. Chop onion and saute until soft in olive oil.

2. Add stock and peas to pan and simmer for 10 minutes.

3. Blend with stick blender until VERY smooth.

4. Season with salt and pepper to taste.

5. Scoff with brown bread and butter.

Next time I will add in some mint as the soup simmers, I think.

And served it in a pretty mug.

Who could resist, did I ask?

My younger three children, that’s who!!

They are not very adventurous, but if I keep persisting then surely, eventually…..

Peas – Some Nutrition Facts

* Peas are both vegetables and legumes

* They are high in vitamins C and K and the B vitamins

* High in manganese, magnesium, iron, zinc and potassium.

* Peas have lots of fibre, great for the gut

* High in cancer-fighting antioxidants which are also excellent for eye health

I love this pea soup recipe -I’ll have to try it.
I’ve just started on a 3 second pea-soup which is literally just boiled peas and some coriander blended to an inch of it’s life. So simple and so yummy! My little girl loves it … my little boy just looks at it and goes ‘I’m okay, Mummy.’ And removes himself promptly!
Otherwise I can’t go past the pumpkin soup – fried onion & lemongrass, pumpkin, maybe some carrot and sweet potato, and then spices, coconut cream and coriander. Mmm.

Soup looks ace , will def try it out. I like easy lentil soup:
Onion, garlic, red lentils, ground coriander, cumin and tumeric, tin of toms, cook and whizz, and children eat it, well mine did. X

That’s my next soup to make then Mairi. My kids are NOT good at eating soup and I really regret that, I should have started ‘em young.

No Seana, should have lived in a cool climate. I noticed we hardly ate any soup in the Med but now back in the UK soup is a staple. X

I love this soup. I often add one potato to thicken it and make it go further. Fresh thyme works well as does half milk, half water in the stock.

As for getting the kids to eat it. Let me share my secret:

Snot Surfers!

They love it:)

You take a bowl of snot (pea soup) use scissors to cut a surfboard and surfer from toast. Stick the surfer’s feet in holes in the surfboard and stand him up. Now float the surf board and serve your yummy snot surfers:)

PS. It is also yummy chilled in the summer. Pea soup, not snot….

Great ideas Annabel, love it. I till try the snot surfers and also the variations. Tomorrow, I think, might try a bit of mint and milk for the next batch. So long as it stays bright, bright green, I’ll be happy.
