Easy Moist Banana Cake – And It’s Quick Too

Some of our favouries recipes have been passed on by our twin mum friends.

There’s something about having twins that makes you find and use very quick and easy recipes.

Funny that.

This cake came from a twin mum friend Sarah. She brought it to a multiple birth club Christmas Party. I was fighting my twins for it!

It’s so moist, that’s the special thing about this recipe, perhaps because it has a really high proportion of bananas in it.

I drizzled this one in white and milk chocolate whilst it was still warm. Why not?

Easy, Moist Banana Cake

350g plain flour
4tsp baking powder
1tsp bicarb of soda
250g melted butter
300g brown sugar
4 eggs
1 tsp vanilla paste
6-8 large bananas mashed
- choc chip or sultanas if desired

1. Melt together brown sugar and butter ( I use the microwave). Cool slightly.

2. Sift and mix together flour, bicarb and baking powder.

3. Add eggs, vanilla and banana to the sugar/butter mixture.

4. Genty fold  in the flour.

5. Add choc chips or sultanas or whatever.

I cook this in a big square tin at 160 in my fan forced oven. It takes about 45 minutes.  Sometimes I make it into muffins or bake as a slice and then it’s about 15 minutes or so.

This recipe makes a large amount, I doubled the original recipe.

It’s an ideal size of cake for a park playdate with the twins’ kindi classes.
