Spiced Turkey Mince in Lettuce Cups

Now we all know that a pet is not just for Christmas.

But do we also all know that turkey isn’t just for Christmas either?

Pay attention those mums and dads who are needing a nutrient rich meals with fewer calories. Turkey is your friend.

Steggles put paid to my ‘what shall we eat for dinner?’ whinging recently by sending me their entire range of Turkey Shortcuts. Quite a haul.

Here’s a 45 second video to show you the range.

Now, I remembered reading a blog comment with a great recipe using turkey mince. So I went off to find that post and the comment.

Eureka, the commenter was called Fiona and she’s left her idea for turkey on this post at Kate Says Stuff.

Fiona wrote:   The best ever turkey mince recipe was given to me by a friend. You really should try this!

Fiona didn’t give the recipe a name, but I did after I tried it.

Ginger and Lime Turkey Mince in Lettuce Cups

Turkey mince 500g
Fresh ginger, grated 2-3 tsp
brown sugar 2 tsp
2 fresh limes
shallots
hoisin sauce to taste
iceberg lettuce

Gently fry the ginger.

Add brown sugar and the juice of the limes.

Add turkey mince and fry till cooked.

Add hoisin sauce to taste and add the shallots right near the end.

Serve in lettuce cups.

Delish!

And nutrient rich whilst being very low in kilojoules.  The kids and I ate it with extra salad for me and some roast potatoes for them.

All eaten with the hands of course!

We’ve pan-fried some of the turkey steaks, my big boys wolfed those down, then ate the leftovers cold in sandwiches. I chopped mine up and had cold turkey on a big, big salad, lovely.

I need to get back on that healthy eating regime! Have just been away with a friend who is a great cook but have eaten too many carbs for too long. Big swim tomorrow and then must ease off and back onto bulk salads and protein for a bit.

I love turkey mince. (Back in the day) my bootcamp instructor put me onto it. It’s so lean – he said stir through a few tablespoons of thai green curry paste and roll into little meatballs and fry, then keep them in the fridge as a snack throughout the day.

I also love their thigh roasts – perfect size for my family.

I love filled lettuce cups and so do my twins – turkey is very healthier option like San Chou bow without pork !

It’s definitely time for all of us to get back onto the healthy eating bandwagon Seana!
I’ve been using turkey mince quite regularly the past few years. I find its mild taste perfect for spag bol for my daughter as well as for sang choy bau and more. It’s also cheaper and leaner than beef mince – another plus!
I make a similar dish for my daughter to have with noddles but just use honey soy marinade. Blanch some broccoli with the noodles and you have a pretty yummy ‘chinese’ dish.

Yes, kids back at school today and I need to get eating well again. Your latest Double Choc Raspberry Brownie recipe not helping!! I will try it, but am putting off until Xmas kilos are gone.
