Healthy Wholemeal Pancake Recipe – Simple, Quick and the Kids Love Them

It’s Pancake Day today and myself and my wee daughter are sharing our favourite healthy breakfast pancake recipe.

But first, lets turn back to the clocks to the 1970′s when I was the age my daughter is.

Each Pancake Day mum would make proper crepes, which we’d all try to toss in the air. Often unsuccesfully!

We’d eat them drenched in lemon juice and piled with sugar; all sweet and a bit slimy. Yum.

So quick, simple and healthy for growing little and large kids.

I do love a pancake or hotcake with beaten egg whites etc etc but they do take a lot more effort.

This one-bowl wonder does the trick for us!

  2. Oh I love a good, simple pancake and this is the best way to make them! My fave topping is lemon juice and sugar but I also love them with lots of fresh strawberries and honey. Mmmmmmm!

  4. Ahh lemon juice and icing sugar!!! That is how we had them – thanks for the reminder, they were awesome. We have honey and cream now but I’m so going back to when I was little – thanks for that :)

  5. Oh they look yummy. My favourite pancakes are blueberry with lemon curd spread on top and just a dollop of extra thick cream or ice cream on the side. I’m not so good at making pancakes though, French desserts that require great technique I’m all over that but pancakes almost always come out slightly not right for me.

  6. Whenever it was a rainy day at school my mum would make giant pancakes for afternoon tea. Often called fatso’s. They were awesome.

  8. We had pancake day every Sunday when I was a kid. I make pancakes every second Sunday (or so) for my tribe, and we all eat waaaay too many!

    • Oh wow, Grace, we must be thinking in sync! This is a good one, unlike the bread I attempted today which came out half baked, I had to slice it and put the slices back int he oven.

      Back to the drawing board!

  11. My mother always celebrated pancake Tuesday and we’d be given savoury crepes for dinner followed by dessert crepes. It was always such a special night. I should re-introduce the tradition to my family xx

  13. Nothing beats lemon juice and sugar. The sugar part is not healthy, but as I rarely ever have sugar, I’d class that as moderation :)
